I did make this today, I use Grandma's Original Molasses for a sweeter, it is gluten free. I did not strain the milk, I like it thick, and I could also add water, if need be. I kept the chia gel in, but it will thicken the milk a bit, this can be over come by adding more water, more want hurt. Leaving the chia gel out is a bad option - you give up the added Omega-3, improved ORAC value, calcium, fiber and all the the other minerals found in chia seeds. Chia seeds also have a low glycemic load.

I used walnuts to made my nut milk. I mentioned this in a prior post: Be careful on the selection of walnuts. For certain alleges, you will want to get them from a Health Food store. I used a common variety; Diamond Chopped Walnuts, however they are manufactured on production lines that also handle other tree nuts, peanuts, wheat, soy, milk and sesame seeds, so take care.

I did not soak the walnuts, however to get the most nutritional benefit from them you have to soak them 24 hours then let them dry before use. I will often do that but I took the shortcut today.

Nut milk can be drink by the glass, cold is best for me. And also used in most places where you would use milk.

I was so excited about this post that I decided to make it today, It was a great afternoon delight. I added 3/4 cup of raisins (a must for me in rice pudding), more cinnamon and a teaspoon more vanilla. For sweeter I decided to use molasses. I used it to make the nut milk as well. If you use Grandma's Original Molasses it is gluten-free. I used walnuts to made my nut milk. Careful on the selection of walnuts. For certain alleges, you will want to get them from a Health Food store. If you can have Ice Cream, this is not bad with a scoop of it, real comfort food.
